Nose:  Cooked fruits (peach, pear, banana, apricot, nutmeg). Toasted hazelnuts
Palate: White fruits, warm spices (nutmeg, cumin) nice bitterness . Mineral  and salty finish

Pairing idea: Seabream with fennel and gratin dauphinois.
